I have a wonderful book on raw foods, called "Raw Foods Made Easy: For 1 or 2 people. When I first started out experimenting with raw foods, I bought a few books, but all too complicated. My advice? Start slow, start simple. As my high school band directer always told us, "Keep It Simple, Stupid." (nice). Don't worry about getting a dehydrator, juicer, or food processor right of the bat, work your way up. On that note, I so happened to come upon a dehydrator this past weekend from a friend, and that thing has been going all day, with fruits, homemade flax crackers, and nuts to make walnut flour. mmmm... I love my days off.. Anyways, onto this delicious little lunch.
You would think it wouldn't be very filling, but it is. The combination of the flavors satisfies every single morsel. And its ridiculously easy. So here it is:
Ingredients:
1 avocado
1/2 cup diced ripe mango
dash salt (I use Himalayan)
2 tsp lime juice
-Cut the avocado's in half and remove the pit by using the large end of large knife. (It should come right out.) Scoop out a little of the avocado to make a larger hole for the filling. Fill with the diced mango until it is heaping. Sprinkle on salt to taste, and drizzle the lime juice all over. (I use a fresh lime and just squeeze from there.) Dig in with a spoon!! Makes 2 servings.
